WINE TASTING NOTES:
Our approachable William Hill Estate North Coast Cabernet Sauvignon offers a smooth, rich and fruit-forward palate. Crafted primarily from Sonoma County Cabernet Sauvignon, the medium-bodied wine opens with abundant dark fruit notes, like ripe wild blackberry, black cherry, blueberry and cassis. The long finish is marked by hints of ripe red plum, toast and caramel.
VITICULTURE NOTES:
The 2016 vintage was another in five consecutive years of exquisite growing seasons. Marked by typical rainfall levels through winter and early spring followed by a consistently sunny and mild summer, vineyards responded with a nicely balanced crop and healthy growth. Grapes developed slowly and evenly throughout the ideal summer, cooled at night by the North Coast’s renowned diurnal temperature shift. Our North Coast Cabernet Sauvignon was selected from a variety of vineyards and regions, with the majority coming from estate vineyards in Sonoma County, and a significant portion from Lake County estate vineyards. Harvest began a bit early, yielding uniformly high-quality Cabernet Sauvignon with depth and complex fruit character.
WINEMAKER NOTES:
Fruit for our North Coast Cabernet Sauvignon was destemmed and crushed prior to fermentation in stainless steel tanks at a maximum temperature of 90°F. Following fermentation, this wine underwent malolactic fermentation to soften the mouthfeel before oak aging.
