The grapes for our Dark Horse Cabernet Sauvignon were harvested at optimum ripeness to extract rich color and velvety tannins. Fermentation occurred at temperatures up to 92°F to achieve more intense flavors and fruit-forward aromatics. After fermentation was complete, the wine was aged in oak to impart dark chocolate and espresso characteristics.
